Vegan Tacos
Vegan Tacos, an easy recipe for any student to make Nottingham a little spicier! Feel free to adjust the recipe to suit your taste with sauce and filling.
Ingredients
Tacos
vegetable oil 1 tbsp
red onion ½, finely chopped
sweet potato 1 large, peeled and cut into 1cm cubes
red pepper 2, deseeded and finely chopped
black beans 400g tin, rinsed and drained
ground cumin 2 tsp
garlic granules 1 tsp
chipotle paste 1 tbsp
small corn tortillas 8-10, warmed
avocado 1, peeled, stoned and finely chopped
dairy-free yoghurt to serve
Salsa
tomatoes 2, finely chopped
red onion ½, finely chopped
lime 1, juiced, plus wedges to serve
coriander a small bunch, ½ finely chopped, plus leaves to serve
Pickled Onions
red onion 1 small, finely sliced
cider vinegar 4 tbsp
caster sugar 2 tbsp
Cooking instructions
STEP 1
Put the pickled onion ingredients in a jar or bowl with 2 tbsp boiling water and a pinch of salt. Leave to pickle while you make the tacos.
STEP 2
Heat the oil in a large frying pan and fry the onion for 10 minutes until soft. Stir in the sweet potato and pepper, then fry for another 5-10 minutes. Stir in the black beans, cumin and garlic granules. Toast the spices for a few minutes, then stir in the chipotle, 100ml boiling water and plenty of seasoning. Simmer for 10 minutes until the veg is tender and the sauce just coats the veg and beans.
STEP 3
Mix the salsa ingredients together in a bowl with some seasoning. Serve the warmed tortillas with the veg and beans, pickled onions, salsa, avocado and yogurt alongside, and let everyone build their own tacos.
